Pumpkin: culinary tradition that was born after the discovery of America

Pumpkin, that is the largest vegetable is in the world, has become an integral part of our food here on Lake Como, thanks to its outstanding versatility. Long-recognized as ‘poor food’, today it as so often has been rediscovered also by great chefs who have made it the most important part of some gourmet dishes.

Perhaps the best known use is the recipe of the classic pumpkin ravioli’s, but for them you need a sweet and compact pumpkin and not a powdery one. Continuing with the specialties you can not miss on our table, risotto with pumpkin, that usually is accompanied  by a “mountain cheese” for the final part of the cooking, fried pumpkin, mashed pumpkin that becomes a cream that accompanies our meat restoring a more balanced and delicate taste.

The pumpkin has very many culinary applications, so it is easily used for homemade recipes, but this time you will find many delicious meals even in countless shelters, “crotti’s”, farms and Larian restaurants.

…And if you have children, it will be fun to dig together pumpkins and then use them as a decorative centerpiece during your dinner (and not only on the evening of 31rd!).

Also our restaurant La Veranda in Moltrasio is ready and it is waiting for you with all the staff to taste the dishes of our tradition.
