Behind the scenes of the La Veranda Restaurant in Moltrasio, chefs Laura and Paolo are riding a young staff made up of professionals. Today, we asked some thing to our chef Paolo, to tell us which philosophy he wants to bring to his table with his proposals.

Hi Paolo, what do you tell us about your cuisine?

Our cuisine is mainly farm-to-table, as we try to use local products, cheeses, meats, polenta flours, local fishermen’s fish, and Mediterranean cuisine with little seasoning and with a special attention to our tradition.
We offer lake fish, polenta and special typical dishes such as tripe or popular one such as boiled fish. Even the desserts are carefully prepared by Laura, my mom, (that is chef with me), so they are “homemade” with quality products.

Paolo, are you aware of food intolerances and customers who prefer vegetarian food?

Of course! We have care of people with food intolerance: celiac disease is increasing in recent times, for this reason we have pasta, bread and other gluten free products into our menu, where there is also always a vegetarian suggestion. For dinners or anniversaries, however, we advise customers to advise and ask for information: this will allow us to create a special menu that meets every need.
